Oh My Heavens!!!!IMG_1277

I made this homemade salad dressing today for my salad lunch. Yum-Mo!

I already love ranch dressing, but I DON’T love all of the fat calories that are in standard ranch dressing. And for a while, I had given up my ranch because of that. But, when I found this wonderful dressing online, I was SO glad that I could continue to enjoy it without worrying about the ingredients. Now, with my new found love for Kefir and all things Kefir, this one is definitely going into my repertoire of recipes.

I didn’t have any garlic powder when I made the first batch, but that didn’t alter the flavor at all. You can also use this dip for dipping vegetables too, so it’s a win-win all the way around. Now, what I did was take the recipe from this site, and the recipe from this site, and combine the two to make my own version because there are some things that I like/didn’t like from both. But trust me when I tell you, all three versions are going to be gooood because of wonderfully, healthy Kefir. Give it a shot. Enjoy!

My Ranch Dressing Version

  • 2 cups milk kefir
  • 2 teaspoons dried parsley flakes
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 2 fresh garlic cloves, minced
  • 1 to 2 teaspoons sea salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 tsp fresh or dried dill
  • dash of cayenne pepper

Instructions:

  1. Combine all ingredients in a bowl, mix well, and allow to rest for 30 minutes to allow flavors to meld.
  2. Taste and adjust salt and pepper to taste. Serve drizzled over a fresh green salad or as a dip for various cut vegetables.
